Singita Grumeti is recruiting for an experienced head chef to join our specialised team. The position will be based in Tanzania.

Key Responsibilities:

  • Manage the kitchen and quality of food according to the Singita Standard of Excellence and SOPs.
  • Drive the company’s goals by planning and implementing strategic plans.
  • Oversee staff canteens and ensure staff meals meet quantity and nutrition standards.
  • Ensure a high-quality food experience for guests.
  • Enhance guest experiences through effective interaction.
  • Supervise food production and hygiene.
  • Design menus and implement new food concepts.
  • Monitor equipment and product quality, minimizing breakage.
  • Administer orders to minimize shortages and wastage.
  • Handover responsibilities effectively between shifts.
  • Prepare pastry items to Singita standards.
  • Identify and eliminate potential workplace risks.
  • Run the kitchen cost-effectively, managing food strategically to reduce waste.
  • Implement Health and Safety procedures.
  • Communicate with departmental teams to meet guest needs and run operations effectively.
  • Look for opportunities to grow and train staff.
  • Contribute to sustainability and “green” lodge operations.
  • Participate in communication and support of Singita’s conservation message.
  • Perform other tasks as requested to support business and operation, fostering collaboration and multi-skilling of staff.

Skills & Experience:

  • 3-Year Chef Qualification or a minimum of 4 years’ experience in a similar role.
  • Ability to calculate food costs and understand kitchen budgets.
  • Good computer literacy.
  • Understanding of kitchen procedures and timing requirements.
  • Wide food knowledge and ability to design menus.
  • Awareness of dietary requirements.
  • Ability to train and manage staff.
  • Understanding of labor law and disciplinary procedures.
  • Passion for the industry and willingness to grow.
  • Knowledge of hygiene protocols and equipment.
  • Knowledge of cleaning methods and products.
  • Understanding of safety procedures and use of firefighting equipment.
  • First Aid training (provided by the company).
  • Care in personal hygiene and grooming.
  • Excellent communication skills.
  • Physical stamina.
  • Nationality or valid working visa.
